Physical Characteristics
  • Appearance: Fine, uniform, light brown to dark brown powder.

  • Aroma & Flavor: Strong, warm, sweet-spicy aroma with a slightly bitter aftertaste — characteristic nutmeg profile.

  • Texture: Smooth, dry, free-flowing (no lumps or caking).

  • Moisture Content:10% (to prevent mold and extend shelf life).

  • Foreign Matter: Free from shell fragments, dust, stones, or other adulterants.

Chemical Characteristics
  • Volatile Oil Content:7–16% (rich in myristicin, elemicin, eugenol — responsible for aroma and flavor).

  • Ash Content:

    • Total Ash ≤ 5%

    • Acid-insoluble Ash ≤ 1%

  • Pesticide Residues: Must comply with importer country’s Maximum Residue Limits (MRLs).

  • Aflatoxin & Heavy Metals: Must be within Codex/EU/ASTA standards.

Microbiological Characteristics
  • Free from Salmonella, E. coli, and other harmful microbes.

  • Yeast and mold within Codex/ASTA safe limits.

  • Steam sterilization or irradiation often required for EU/US exports.

Packaging Characteristics
  • Bulk Exports: 25–50 kg fiber drums, HDPE bags, or kraft paper bags with food-grade polyethylene liners.

  • Retail Exports: 50 g – 1 kg laminated pouches, PET jars, or glass bottles.

  • Special Packaging: Vacuum-sealed or nitrogen-flushed packs to retain aroma and prevent oxidation.

  • Labeling: Must include product name, grade, net weight, batch/lot no., date of packing, expiry date, country of origin, and certifications.

Trade & Compliance
  • Grades: Based on aroma strength, volatile oil content, and purity.

  • Shelf Life: 12–18 months (powder loses aroma faster than whole nutmeg).

  • Certifications: HACCP, ISO, FSSAI, Organic (if required), ASTA compliance.

  • Traceability: Often required for premium buyers (EU, Middle East, USA).
